I was so excited to tally up your old favorites and to discover what you loved from our archives.

It’s fun to think of all of you, our loving customers, as co-creators at BonBonerie. We would put a new recipe on the menu and you would either buy it, which meant it was good, or let it sit in the pastry case, which meant it would eventually be donated to the Little Sisters of the Poor. No offense to the sisters, but they liked almost everything. There mustn’t have been a very good baker at the convent.

One time we had to change the peanut butter in the peanut butter pockets. It did not go over well. An exuberant fan of that cookie passionately expressed his disapproval of our misguided decision to change the peanut butter. He insisted that the new peanut butter ruined the cookie for him. Unfortunately, the peanut butter’s formula had changed, not our recipe, and we had no control over that. This kind of passionate complaint made us supremely aware of how sensitive and appreciative our customers are. When we made the Coney Island Hearts in a smaller size, many of you let us know that you thought the cookie tasted better in its larger size. You were both right, so now we make them in both sizes.

We are extremely aware of how everything matters in creating a great pastry, cookie, or cake. The raw ingredients, the oven, the pans, and the knowing hand of every baker and decorator. Sometimes the weather can even alter a recipe’s outcome. Don’t try to make angel food cakes on a rainy day. Baking is an art and a science.

According to our staff at the bakery counter, you really enjoyed having some of your old favorites back. Thanks to your enthusiasm, we plan on putting some of those old favorites back on the menu.
